- 1 whole chicken cut into small pieces or use drumsticks.
- Vegetable oil for deep fry
- 2 lemon grass
- 3 bay leaves
- 1 cup of water
- 50 ml coconut milk
- 2 tsp salt
- 1 tsp chicken powder
- 1 tsp sugar
Ground Spices
- 1 tbsp coriander seedÂ
- 2 inches galangal
- 2 inches ginger
- 2 inches turmeric or turmeric powder
- 7 cloves garlic
- 3 candlenuts
Begin by placing the chicken in a spacious bowl and adding the ground spices. Mix well and let the mixture marinate for an hour. Then, set it aside.
Next, transfer the marinated chicken to a large pot. Add water and coconut milk and bring them to a boil over medium-high heat. Then, reduce the heat to medium-low and let the ingredients gently simmer for about 30 minutes until they blend well.
Take the chicken out of the pot and allow it to cool, setting it aside.
In a pan or wok, heat approximately 2 inches of oil. Add the chicken pieces and fry until they turn golden brown and have a crispy exterior. Remember to turn the pieces occasionally to ensure even browning on all sides.
