Ayam Goreng Kuning Recipe – Fried Turmeric Chicken
Ingredients
- 1 whole chicken cut into small pieces or use drumsticks.
- Vegetable oil for deep fry
- 2 lemon grass
- 3 bay leaves
- 1 cup of water
- 50 ml coconut milk
- 2 tsp salt
- 1 tsp chicken powder
- 1 tsp sugar
Ground Spices
- 1 tbsp coriander seed
- 2 inches galangal
- 2 inches ginger
- 2 inches turmeric or turmeric powder
- 7 cloves garlic
- 3 candlenuts
Instructions
- Begin by placing the chicken in a spacious bowl and adding the ground spices. Mix well and let the mixture marinate for an hour. Then, set it aside.
- Next, transfer the marinated chicken to a large pot. Add water and coconut milk and bring them to a boil over medium-high heat. Then, reduce the heat to medium-low and let the ingredients gently simmer for about 30 minutes until they blend well.
- Take the chicken out of the pot and allow it to cool, setting it aside.
- In a pan or wok, heat approximately 2 inches of oil. Add the chicken pieces and fry until they turn golden brown and have a crispy exterior. Remember to turn the pieces occasionally to ensure even browning on all sides.
- Place the fried chicken on paper towels to drain any excess oil. Then, serve it promptly alongside steamed rice, sambal, and a simple salad. Don't forget to skim any leftover crumbs or crispy bits from the oil and sprinkle them over the chicken as a delightful garnish.
